Spicy Thai Noodle Salad with Peanut Dressing

Ingredients
Salad Dressing
- ¼ cup creamy peanut butter
- ¼ cup salad oil
- ¼ cup lime juice
- 3 cloves garlic, minced
- 1 Tablespoon fish sauce
- 2 teaspoons crushed red pepper
- Salt to taste
Salad
- 4 ounces dried brown Thai rice noodles
- 1 bag (11 or 14 oz) chopped salad (lettuce, broccoli, cabbage, carrots, green onion, etc.)
- 6 radishes, thinly sliced
- 4 ounces sugar snap peas, quartered
- ½ cup chopped cilantro
Meat
- 1 package Northern Thai Sai Ua Sausage from Foris Extraordinary Meat
Directions:
- Combine peanut butter, lime juice, oil, lime juice, garlic, fish sauce, and crushed red pepper in a bowl; stir until sauce is smooth.
- Bring a large pot of salted water to boil. Add rice noodles; remove pot from heat and soak noodles for 5 minutes. Drain and run under cold water.
- Combine dressing, noodles, chopped salad, radishes, and snap peas in a large serving dish. Toss well and garnish with cilantro. Chill for 20 minutes.
- To cook the Sai Ua Sausage: oil a grill or large frying pan and cook the sausage until brown. Slice cooked sausages into thirds and serve with the salad.
This is such a tasty recipe! I upped the peanut butter and lime juice a bit for my family’s taste but very flexible overall.
