Spicy Thai Noodle Salad with Peanut Dressing

Yield: 6 servings

Ingredients

Salad Dressing

  • ¼ cup creamy peanut butter
  • ¼ cup salad oil
  • ¼ cup lime juice
  • 3 cloves garlic, minced
  • 1 Tablespoon fish sauce
  • 2 teaspoons crushed red pepper
  • Salt to taste

Salad

  • 4 ounces dried brown Thai rice noodles
  • 1 bag (11 or 14 oz) chopped salad (lettuce, broccoli, cabbage, carrots, green onion, etc.)
  • 6 radishes, thinly sliced
  • 4 ounces sugar snap peas, quartered
  • ½ cup chopped cilantro

Meat

Directions:

  1. Combine peanut butter, lime juice, oil, lime juice, garlic, fish sauce, and crushed red pepper in a bowl; stir until sauce is smooth.
  2. Bring a large pot of salted water to boil. Add rice noodles; remove pot from heat and soak noodles for 5 minutes. Drain and run under cold water. 
  3. Combine dressing, noodles, chopped salad, radishes, and snap peas in a large serving dish. Toss well and garnish with cilantro. Chill for 20 minutes.
  4. To cook the Sai Ua Sausage: oil a grill or large frying pan and cook the sausage until brown. Slice cooked sausages into thirds and serve with the salad.

    This is such a tasty recipe! I upped the peanut butter and lime juice a bit for my family’s taste but very flexible overall.
