Shepherd's Pie
Serves 6 | Cook Time: 30 minutes
Ingredients
- 1 16 oz package Foris Cumberland Sausage
- 2 24 oz packages Bob Evans Original Mashed Potatoes (Note: If you have the time on a weeknight to make mashed potatoes from scratch, go for it. You will want enough to serve 6-8)
- 1 12 oz package of frozen peas and carrots
- 1 4 oz can sliced or chunky style mushrooms, drained
- 1 c beef broth
- 2/3 cup red wine (optional)
- 2 T flour
- Cooking oil
Directions
- Grease 8” square baking dish.
- Preheat oven to 350.
- Remove the Cumberland Sausage from its casing and break into pieces. Put oil in pan and sauté sausage until lightly browned.
- Add the frozen vegetables and mushrooms to the pan. Cook 5 minutes to defrost vegetables.
- Add beef broth and optional wine. Stir and continue to cook 5 minutes.
- Sprinkle flour over top and stir. Let liquid cook off a bit. That’s it!
- Put meat/vegetable mixture in the bottom of the baking dish.
- Vigorously stir mashed potatoes. Spread potatoes on top of the meat/vegetable mixture.
- Bake at 350 for 30 minutes.
- Raise oven temperature to broil. Broil dish briefly to slightly brown top of pie. Watch it so it does not burn.
- Remove from oven. Sprinkle parsley on top. Serve alone or with salad.
